- Cheese came out hard: 20 min baked plus a grill finish is too much. Next time add the cheese for the last 10 minutes only, or bake 15 and grill 2-3.
- Texture is soft and lasagne-like, not crisp — weird for the first few bites, then good. Expect that rather than fighting it.
- Sauce went on a bit heavy, level with the tops of the rolls. Slightly less next time if you want the rolls to keep some definition.
- Blended salsa rather than stirred in as chunks, because cooked bell pepper is not a favourite — blended version tasted good on a chip, keep doing it.
- Taco seasoning does double duty: a third of the mix into the sauce to simmer (the corn starch thickens it), the rest into the filling.
- Real time was closer to 90 minutes, not the 55 estimated. Mostly prep and faff, not cooking.
- Filling made more than the dish held — plan for a second pack of tortillas or keep the extra as a bean chilli.

- Skip the sauce, rolling and bake — serve the filling straight in warmed tortillas — Fry the tofu harder and drier
Migas
- Tear the mini tortillas into the pan and fry them in the chorizo fat until half-crisp, then crumble the tofu in and cook it all together — 8 minutes, one pan
Whipped tofu dip on the side
- Blitz a block of tofu with olive oil, lemon, garlic and salt into a labneh-ish spread, pool ajvar in the middle — 5 minutes
